Teacups and Treats

Christmas romances have a lot going for them. Falling in love during the most wonderful time of the year. Guaranteed presents under the tree. Friends. Family.

And food.

The food at Christmas is the best. The turkey. The mashed potatoes. And especially the desserts.

That’s probably why one of my stories in “Tinsel and Teacups” has a baker heroine. Gaby Boudreau owns Butterlicious Bakery loves making tasty treats for all the residents of Holiday Beach…and one firefighter in particular. (Check out Gaby and Devon’s story “Sweet Christmas.”)

Like Gaby, I have a culinary Achilles’ heel. I don’t make pie. Mrs. Grocery Store and Mr. Bakery take care of those needs when the situation arises. But I love doing all the rest of my holiday baking. Personally, I’m a cookie fiend. Bars and fudge and cake are good, but at Christmas, I am all about the cookies.

Here is one of my new favourite recipes. I found it a couple of years ago and it was a big hit on the dainty tray. It’s also kid-friendly if you have little elf helpers. The best part of these cookies is that they are literally a “one-bite” dessert. Don’t give into the temptation to make them bigger; their tiny size is a big part of their appeal.

CHRISTMAS CONFETTI BITES

1 cup cold butter, diced ⅔ cup white sugar ½ teaspoon (almond extract 2¼ cup all-purpose flour 2½ tablespoons coloured sprinkles (red, green, white*)

Mix the butter, sugar, almond extract and flour until the dough becomes crumbly.

Add 2 tbsp of sprinkles and mix again (the mixture will remain crumbly).

Place the mixture in a parchment-lined 8” square pan and press into an even layer. Sprinkle the remaining ½ tbsp of sprinkles on top and press in gently. Put in fridge for 15 minutes to chill.

Remove the dough from the tray by gently lifting the parchment paper. Cut dough into ½ inch squares. Do not cut larger than that.

Bake in a pre-heated oven at 350°F (180°C) for 12-15 minutes. The bites will spread a little so leave room between the squares on the pan. Let cool.

These freeze very well. They’re also great at filling up the empty spaces of a dainty tray.

* These colours make the cookies look very festive, but you can easily colour-code the sprinkles according to the occasion. (Orange and brown for Halloween. Pink, yellow, and white for Easter.) You can also always use regular mixed sprinkle colours.
